Matzo Apple Pudding


This is one of the best Bread/ Matzo pudding I've ever made. I've made mine using an Orange instead of the lemon, but had the lemon one also and it's delicious both ways.


Ingredients:

10 matzoh

4 eggs, separated

1 teaspoon salt

1 3/4 cups sugar

1 teaspoon cinnamon

1 cup raisins

3/4 cup sweet red wine or grape juice

4 apples shredded

1 lemon rind and juice (if using oranges, juice and rind of 1 orange)

1/2 stick melted butter or margarine

1 cup nuts, optinional


Preparation:

~ Simmer raisins in wine/juice for 5 minutes. Let stand while mixing rest of pudding.

~ Separate 4 eggs. Beat egg whites with 1/2 cup sugar and set aside.

~ Soak matzohs for 3 to 5 minutes, squeeze dry, and place in large mixing bowl.

Add the following to the soaked matazos:
~ Beaten egg yolks, raisins, shredded apples and wine. Add lemon juice, lemon rind, and 1/2 stick melted butter or margarine. Add sugar and cinnamon (mixed together). Add nuts, if desired.

Gently fold mixture into egg whites until well mixed.

9X13X2 well greased and floured baking pan.

Bake at 375 degrees F. for about 1 hour.

Passover Brownies


I've found this delicious Brownie recipe on a Brazilian Jewish site. My family loved them. Mark said I can make them all year round :) This is a real keeper.

Preheat oven at 350 degrees.

Greased 12X8X2 baking pan.

Ingredients:

1 cup Semi-Sweet Chocolate Chips

3 Tbsp. margarine

1 1/2 cups sugar

4 eggs, well beaten (room temperature)

1 tsp. vanilla

1/2 tsp salt

3/4 cup Matzoh meal (make your own)

1 cup chpped walnuts

Preparation:

Melt chocolate chips and margarine together, remove from heat and add, sugar vanilla. Add well beaten eggs and Matzo meal at once and mix very well without stopping, in order for eggs not to cook. Allow it to sit for 15 minutes before baking. This is needed in order to soften the Matzo meal a bit. Cut while still warm. Enjoy it.

Make Your Own Matzo Meal Flour




Buy unsalted, plain matzo to make your matzo meal.


Since I don't own a food processor I used my blender to create matzo meal. Put a few pieces of broken matzo into your blender, using the chopping setting and blend for a minute or so. Check the meal for consistency, if there are still large pieces of matzo, process for a few more seconds. Keep blending until the matzo meal is as finely ground as you would like it.
I also read this can be done by hand with a rolling pin and and a plastic bag, but a bit more work.


It takes approximately 1 whole matzo to make a 1/4 cup of meal.

Passover - 2008





Our Passover like always was very lovely....always something new to learn.
The Lord is merciful, full of love and compassion.......

I still don't have a formal Seder plate, I guess I have never found one liked, actually I did, but it costs more than what I can afford for now. I am waiting until I go to Israel one day maybe I will find one there for less.
I have always had a house full for Passover, this year DD begged for us not to have anyone over, to just have our Seder by ourselves.

Every year for Passover, I have used disposable plates for everyone, with the main Seder elements on a platter at each side of the table along with a cup of salt water. Look what I did different this year..... Last summer I was at my Thrift store and found these lovely old fashioned desert plates and cups. I had in mind to use it as Yeshua (Jesus) being the fruit of the vine theme. So, last moment the Lord showed me how to use them. We each had our own Seder plate and salt water. Can you tell how salty this water was? I asked Anna to make the water salty, and she did :)


Salt water cup, parsley, finely shredded horseradish, chicken bone (symbolic of the Lamb) sweet Charoset (apple, walnut, brown sugar, cinnamon wine or grape juice mixture) My family chose
not to use the traditional egg as part of this.


Yesterday was also my birthday, so when we arrived at home Sunday night, Anna couldn't wait until I could open my birthday present from her.....she said it was already the evening of the 21 st. Look what she gave me, Miss Potter, if you haven't seen this movie, this is a must see one.



I am hoping that sometime today I will have the time to upload adance we did this weekend taken out of Isaiah 53. It's a beautiful dance!

Chocolate Covered Toffee Matzo


Milk and White Chocolate Toffee Matzo

Ingredients:

1/2 cup butter (no substitute)

1 cup brown sugar

½ lb. matzah

3 cups butterscotch morsels (you can use milk chocolate, semisweet, or peanut butter morsels, and as much or less you would like it)

Chopped nuts (optional)

Preparation:
1. Line two cookie sheets with foil and spray them with oil. Arrange matzah, broken in half, on lined cookie sheets. (Some overlapping is fine.)

2. Melt butter and sugar over low heat; stirring constantly, making sure sugar is dissolved.

3. Pour over matzah parts and spread with spatula.

4. Bake in 350 degree oven for 3-4 minutes (watch closely-it burns easily!!!) until it starts to bubble.

5. Cover with chocolate chips and put back in the oven until the chips start to melt. (Hint, the morsels may not look melted, but take out and spread with spatula or knife to test. Bake a few more minutes if still solid.)

6. Spread the chocolate with a spatula to cover the matzo.

7. Option- sprinkle chopped nuts on top.

8. Freeze until hard; then break into pieces.

Note:
_ I prefer to use a jelly roll pan. This is very messy; it does have the tendency to be runny.
_You can spread the sugar/butter mixture as thin or as thick as wanted.

Passover/Unleavened Bread



Hi there no time no see, blog :D)

I wanted to stop and say hi, to all of you who faithfully visit me, thank you! ((((hugs)))))

As some of you read my post below I have been busy with my house. As we are approaching Passover/Unleavened Bread week, I like to welcome these holidays with a light heart and an orderly, clean home. So, slowly I have taken on the tasks of cleaning, organizing and purging. Wow, I am totally blown away of how this is also in part connected with the spiritual world.

I can't begin to tell in my own words how spiritually fulfilling these Holidays are. "IT'S ALL ABOUT the Messiah." After attending my first Passover Seder, I felt cheated and robbed by the church for not making this part of the church Holidays and part of our lives. The Passover Seder walks you through sin, bondage, salvation, freedom from sin, communion with God, our Savior, his teachings and His glorious Resurrection.

Unleavened Bread, this is a most amazing week! As one physically abstains from yeast products, which yeast in the bible signifies sin.... do you begin seeing the connection here? Spiritual experience with the physical body. Now, we need to concentrate in the spiritual first and foremost. I also would like to make sure I say this. I do not keep these holidays as a means for salvation, my salvation comes from me yielding my heart and my life to Jesus and His salvation that was freely/unconditionally given for me. I do keep these Holidays because they help me to connect closer to my Saviour.

What are some of the plans I have for the following week? Finish my spring cleaning, I am almost done, basically the inside of my kitchen cabinets and refrigerator. Tomorrow is DH's birthday, so I need to finish his Orange Cake today. DD and I are part of the dance team of our congregation, we are practicing for Passover presentation, we have dance practice this evening after service, tomorrow and Sunday. Next week, we have three more dance practices. Cook my Passover meal ahead and also the food that we donate for our congregation's Passover dinner. You guys will never believe how many people show up for this, an average of 600 people from all over Indianapolis. Our congregation does this as an outreach to the community, it's pretty amazing how everyone pitches in to set this up. If I knew how I would upload a video from last year as we set up for this. In less than two hours the drinks are made, the Seder plates are put together, chairs and tables in place and etc... Maybe someone can help me on how to upload a video????

I am hoping to post some of my Matza recipes, yummy!!!!
