Honey Cake






Ingredients:


3/4 cup - Sugar
2 - Eggs
1 Tbs. - Oil
1/2 cup - Honey
1/3 cup - Cold strong coffee (brewed)
2 cups - Flour
1/4 tsp. - Ginger
2 tsp. - Baking powder
1/2 tsp. - Baking soda
1/2 tsp. - Allspice
1 tsp. - Cinnamon
1/2 cup - shelled almonds (for cake above I added the nuts in the batter, just before I baked it)

Preparation:

Beat eggs until frothy. Add sugar, honey, oil and beat some more. Alternately add liquids and sifted dry ingredients. Pour into greased 9 x 9 inch pan. Gently sprinkle almonds on top of batter. Bake in 350 F oven for 3/4 hour. Test by placing cake tester or toothpick in center of cake. When tester comes out dry, cake is done.


This is so delicious served with a cup of coffee in the middle of an afternoon in the company of a good friend.

Here is a book I bought for Anna years ago. We love Patricia Polacco at our house, we own many of her books. In this book grandpa takes Patricia on a Bee chase until he finds out where the honey is......lovely sweet story! This is a very Jewish story. I love the way the Jews will use word pictures in the physical aspect to illustrate a spiritual concept, isn't this cool?
