This is one of the best Bread/ Matzo pudding I've ever made. I've made mine using an Orange instead of the lemon, but had the lemon one also and it's delicious both ways.
Ingredients:
10 matzoh
4 eggs, separated
1 teaspoon salt
1 3/4 cups sugar
1 teaspoon cinnamon
1 cup raisins
3/4 cup sweet red wine or grape juice
4 apples shredded
1 lemon rind and juice (if using oranges, juice and rind of 1 orange)
1/2 stick melted butter or margarine
1 cup nuts, optinional
Preparation:
~ Simmer raisins in wine/juice for 5 minutes. Let stand while mixing rest of pudding.

OH, that looks absolutely delicious! That is something I think my family would love. Stupid question, though. What is a matazo and where would I find them?
I hope you're doing well! I think of you often!!
God bless you ~ Julie
